Cheesy Beef Noodle Casserole

This beef noodle casserole is the best ground beef casserole with wide egg noodles, tomato sauce and baked with cheese. This easy dinner is bound to be a family favorite!

Ingredients


  • 10 oz wide egg noodles
  • 1 tablespoon olive oil
  • 2 teaspoons minced garlic
  • 1 cup chopped sweet onion
  • 1 cup chopped green bell pepper
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon dried oregano
  • 1 lb lean ground beef see note
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup whole kernel corn frozen or from a can
  • 2 cups crushed tomatoes
  • 1.5 cups shredded cheddar cheese


Instructions


  1. Butter a 13" x 9" casserole dish.
  2. Preheat oven to 375 degrees F.
  3. Cook noodles according to instructions on the packaging. Drain and place in casserole dish.
  4. In a large skillet, heat up olive oil.
  5. Add garlic, onion and bell pepper. Saute for 3 minutes or until the onion is almost translucent.
  6. Add Italian seasoning and oregano. Saute 1 minute, stirring often.
  7. Add ground beef and cook, breaking it apart with a wooden spoon. Season with salt and pepper.
  8. Add corn and stir in. Add crushed tomatoes and stir in. Bring the mixture to simmer.
  9. Pour the meat sauce over noodles and stir everything together. Add 1/2 cup of cheese and stir in.
  10. Top with remaining cheese and bake for 15 minutes.
  11. Remove from oven and let cool for 10 minutes before serving.
