Loaded Fried Mashed Potatoes Recipes

INGREDIENTS
  1. Vegetable oil, for frying
  2. 2 1/2 c. mashed potatoes
  3. 1/2 c. shredded cheddar
  4. large egg, beaten
  5. 1 tbsp. finely chopped chives, plus more for garnish
  6. 1/2 tsp. hot sauce
  7. 1/2 tsp. kosher salt
  8. All-purpose flour (optional)
  9. Sour cream, for serving 
DIRECTIONS
  1. In a large skillet over medium heat, add enough oil to fill pan a third of the way up. In a large bowl, stir potatoes, cheese, egg, chives, hot sauce, and salt until combined. (If your mashed potatoes are a little runny, add flour one tablespoon at a time until you can form dough balls.) 
  2. Working in batches, scoop heaping tablespoons of mixture and drop into hot oil. Fry until golden on both sides, about 2 minutes per side. 
  3. Top potatoes with sour cream and chives before serving.
