Ingredients


  • 2 pounds ground beef
  • 1 medium onion chopped
  • 2 packets taco seasoning
  • 1 15 ounce can corn, drained
  • 1 16 ounce jar salsa
  • 1 1/2 cups water
  • 2-4 cups shredded cheese
  • 2 8.5 ounce packages cornbread mix
  • 2 eggs
  • 2/3 cups milk


Instructions



  1. In a large skillet, brown ground beef with onions. Drain. Return to skillet.
  2. Add salsa, corn, taco seasoning, and water to skillet with ground beef. Stir.
  3. Bring to a simmer while stirring. Allow to simmer for about 5-7 minutes.
  4. Pour ground beef mixture in a 9"x13" casserole dish.
  5. Sprinkle shredded cheese on top. Set aside.
  6. In a medium bowl, add cornbread mix, eggs, and milk. Whisk to combine. Pour mixture over ground beef mixture.
  7. Bake at 350° for about 40-45 minutes until cornbread is set.
  8. Serve warm with a dollop of sour cream.
