Ingredients
- 2 pounds ground beef
- 1 medium onion chopped
- 2 packets taco seasoning
- 1 15 ounce can corn, drained
- 1 16 ounce jar salsa
- 1 1/2 cups water
- 2-4 cups shredded cheese
- 2 8.5 ounce packages cornbread mix
- 2 eggs
- 2/3 cups milk
Instructions
- In a large skillet, brown ground beef with onions. Drain. Return to skillet.
- Add salsa, corn, taco seasoning, and water to skillet with ground beef. Stir.
- Bring to a simmer while stirring. Allow to simmer for about 5-7 minutes.
- Pour ground beef mixture in a 9"x13" casserole dish.
- Sprinkle shredded cheese on top. Set aside.
- In a medium bowl, add cornbread mix, eggs, and milk. Whisk to combine. Pour mixture over ground beef mixture.
- Bake at 350° for about 40-45 minutes until cornbread is set.
- Serve warm with a dollop of sour cream.
