Ingredients
- 5 cups cooked rice
- 1/4 cup Olive oil
- 1 medium onion diced
- 1 cup carrot sliced
- 1 lb chicken diced into bite sized pieces
- 8 eggs beaten
- 1/4 cup milk
- Salt and pepper
- Green onions optional
Instructions
- Start by cooking your rice according to the package directions, we use our rice cooker as it has been a saving grace.
- Next in a non-stick pan add olive oil and your chopped carrots and onions and cook over medium heat until tender and translucent, remove from pan.
- In the same pan add your chicken and cook until no longer pink and juices run clear, again remove from pan.
- Lastly in same pan add your eggs and fry until cooked through.
- In a large bowl add your cooked rice, vegetables, chicken and eggs and toss to combined.
- Add salt and pepper to your liking and again give it a good stir.
- Lastly garnish with some green onions if desired.
