Chicken Mushroom Gravy Recipe

This Chicken and Mushroom Gravy Recipe is everything a hearty gravy should be! Chunks of chicken in a delicious mushroom and vegetable gravy.

Ingredients

1 chicken breast (about 3/4 of a lb)
1 tsp olive oil (or Canola oil)
12 oz white mushrooms, chopped
1 medium onion, finely chopped
1 large carrot, grated
2 cups chicken broth
1 1/2 cups water
4 Tbsp unsalted butter
1/4 cup all-purpose flour
3 Tbsp fresh dill, chopped
1 tsp table salt, or to taste
1/4 tsp ground pepper

Instructions


  1. Finely chop the onion, grate the carrot, cut chicken in small pieces and chop the mushrooms the same size as the chicken.
  2. In a skillet, heat 1 tsp oil. Saute chicken until cooked. Season lightly with salt and pepper.
  3. In a medium pot, over medium heat, combine the water with chicken broth, bring to a soft boil. Remove 1/3 cup of liquid and set aside.
  4. Once the chicken is cooked, at it to the pot. Turn heat down to a soft boil.
  5. In the same skillet, over med/high heat, saute mushrooms with 1 tablespoon butter until browned. Lightly season with salt and pepper. Add mushrooms to pot with chicken and broth.
  6. In the same skillet, cook onions over medium heat with 1 1/2 tablespoons butter until tender.
