Ingredients
- 2 tablespoons extra-virgin olive oil
- 1 pound chuck beef cut into cubes
- 1/4 cup flour
- 2 stalks celery chopped
- 3 large carrots chopped
- 1/2 cup frozen peas
- 5 yukon gold potatoes cut into bite-sized cubes
- 1 red bell pepper seeded and diced
- 1 yellow onion chopped
- 2 cloves garlic minced
- 2 bay leaves
- 2 teaspoons dried thyme
- 1/4 cup fresh parsley leaves chopped
- 2 tablespoons tomato paste
- Salt and pepper to taste
- 2 1/2 cups low-sodium beef broth
- 1/2 cup red wine
Instructions
- Heat oil in a cast iron skillet over medium-high heat.
- Coat the beef with the flour and brown in the hot skillet.
- Add the browned beef to the slow cooker along with the remaining ingredients.
- Cook on low for 8 hours. Remove the bay leaves and season with more salt and pepper if needed.
